Pimento Cheese Bread: Hot and Simple

I had made a quick home made cheesy broccoli and potato soup one night for my 10 yr. old son. I wanted a dipper to go along with it. I wanted something so simple, even he would be able to make it. I also wanted it to taste "Good". 


I promise that you will not be disappointed in this recipe. 2 ingredients, that's it! I normally "add" my spin to store bought ingredients, but trust me, this stands alone.

                                       Pimento Cheese Bread: Hot and Simple


4 slices of Nature's Own or Pepperidge Farms Sandwich Rounds (I use Whole Wheat)
1 jar or cannister of your favorite Pimento Cheese Spread


Slather Pimento Cheese Spread onto both Sandwich Rounds (the inside part)
Place on a paper towel or micro-safe plate and heat for 15-20 seconds or until hot and bubbly.


That's it! I roll the pieces into a log and secure it with or without a tooth pick and dip into my favorite soup or chowder. Yum-Yum!

Saucy Scrambled Eggs

It was  Valentine's Day! I wanted this breakfast to speak "Romance, passion, titillating...I wanted soft, creamy billowy eggs!
Ladies, I  "Won My Man" with these eggs! Or was it the big juicy Splenda dipped strawberries that I ate at the end of the meal. As I took a bite out of the strawberry and leaned very close to my Lover, I said, "You know that strawberries have another purpose besides just tasting great..it's used to brighten teeth and freshen breath. Use your imagination after that.......


                                                      Saucy Scrambled Eggs

Hollandaise Sauce

4 eggs, beaten well
2 tsp. fresh lemon juice
1 stick unsalted butter, melted 
1/4 tsp. Cayenne powder
1/2 tsp. salt
2 sprigs chopped chives

Combine all ingredients into a sauce pan over medium/low heat. Stirring frequently, cook until thickened. Serve over egg mixture. If too thick, add a few drops of water.

6 eggs
S & P (salt/pepper) 
1/3 cup half and half
1/4 cup each of chopped red, yellow and green bell peppers 
8 sprigs of asparagus sliced thinly 
1 shallot, minced 
6 white mushrooms, sliced thinly 
1/4 cup Smart Balance butter spread or Ghee; then another 1/4 cup-set both aside
1/2 tsp. salt
1/2 tsp. pepper
Chili Paste (optional) 
4 Croissants
4 ounces Brie Cheese
Smoked paprika (sprinkle on top for looks and added smoky flavor) 

Melt 1/4 cup Smart Balance or Ghee in a large skillet. Saute' bell peppers, asparagus, shallot and mushrooms approximately 5 minutes. Set Aside. Clean out skillet and dry well. Add the other part of the Smart Balance and melt on medium heat.


Combine eggs and half and half. Mix well till creamy. Sprinkle lightly with seasoned salt and pepper. Pour eggs into skillet. Don't scramble eggs as you have seen on tv. Let eggs sit in skillet until the ends look "set" about 3 minutes. Tilt pan with one hand and in other hand  take spatula and push eggs in an "up position" opposite side. Let eggs sit about 1 minute and repeat tilting/pushing eggs in the opposite direction. Repeat this several times until almost done. Add slices of Brie Cheese on top and then add cooked veggies. Stir lightly. Eggs should be soft and billowy looking.

Warm 4 Croissants in Microwave for  30 seconds.


Plate Saucy Scrambled Eggs in the following order:


Croissant (split length-wise)
1 scoop of egg mixture
Hollandaise Sauce (add the amount that seems best for you)
*Add a poky dot of chili paste on top for an added kick! 


Add several Splenda Dipped Strawberries around plate and Enjoy!
